Cooking with Alicia -- Caribbean Style

Well, as we know you just can't keep Alicia out of the kitchen. It just takes something a bit different and an interesting cookbook. We found "Modern Caribbean Cuisine" and she was off.

We had discovered callaloo at a local restaurant and we were able to buy some from Darkie, so Alicia decided to "make something with callaloo". We had some red snapper in the fridge and there was a recipe for "Fish Baked on Callaloo Leaves" and "Rice and Black-Eyed Peas Cookup". Alicia was on it!

Prepare the callaloo ...


 Chop it ...


 Add some coconut milk ... have peas and rice simmering on the back burner ...


 Then place the fish on top of the callaloo, cover with some sliced tomatoes and basil ... and a bechamel sauce with Parmesan ... no ... wait! Bechamel sauce and Parmesan? Too much work ... add some coconut cream instead; then bake til fish is done.

YUMMY!
